With hot summer nights coming soon nobody is wanting to turn on their ovens and heat up the house even more! Often in the summer I turn to store bought rotisserie chickens that are pre-cooked and full of flavor! There are many ways to use a store bought rotisserie chicken and turn them into delicious dinners by dressing them up with fresh and flavorful ideas! Rotisserie slow cooked chickens ensures even cooking and seals in loads of mouth watering moisture, work all done by your local grocery store so you don’t have to put in any effort but take it home and EAT!

    You forgot that the leftover skin, fat, bones, etc. can be boiled for some of the best homemade stock.

      Yes very true but I dont know too much about making a stock.. on my to do list

        Fill a large pot with water, add skin, bones and whatever is left over from the chicken, bunches of onion, celery, fresh or dried herbs, mushrooms, veggies (in other words, whatever you have around the house) and bring to a boil. After it is boiling, turn to simmer and let cook for a while (I often forget mine and it cooks for several hours). I strain mine at this point and use the veggies in my soup. Or, you can strain it and freeze portions of the stock in freezer bags for later use. Hope this helps.

          Regarding the chicken stock- put it in ice trays and freeze it…once frozen, throw it in a zip lock bag and take out what you need when you need it!

      Easy made in the crock pot (omit the skin to derease the fat content)

    You can make chicken salad out of it too.. I do that all the time with the leftovers.

    you can also make mole using already prepared mole by Mole Dona just add a little water and some chicken bouillon for extra flavoring.

    I take the chicken off the bones, add BBQ sauce in a pan and heat it up. Take your favorite bread roll or any type of bread and melt cheese on it and make pulled BBQ chicken Sandwiches. I also add a pickle and some chips on the side. The Family Loves it!
